1. This is where dried persimmons begin

Nurifarmer’s dried persimmons start right here. Surrounded by mountains and forests, this production space is more than just a place to dry persimmons. It’s designed to manage every step—from the environment where the persimmons grow to the processes that turn them into food. From the outside, it appears as a quiet, neat building. But step inside, and the pathways and workflow for dried persimmons are clearly defined.
We believe that before the ‘work of making’ dried persimmons, it’s crucial to first see where and how they are made. That’s why Nuri Nongbu’s dried persimmon story always begins in this space.

2. From the moment of harvest, dried persimmons are planned.

Persimmons are already sorted by purpose the instant they are picked.
Not all persimmons become dried persimmons immediately. Those suitable for eating fresh, those ripened for hongsi, and those selected specifically for drying are managed differently from the start. At Nuri Nongbu, persimmons for dried persimmons are separately selected immediately after harvest based on size, sugar content, and surface condition.
This process is not mere sorting but a preparatory step considering the drying process that will unfold over the following months. The quality of dried persimmons isn’t determined solely during drying. Since the choice of persimmons already determines half the outcome, this stage becomes the first benchmark for dried persimmons.

3. The Core of Dried Persimmons Crafted by Time and Air

The most crucial time in making dried persimmons is precisely this drying process.
In the drying space at Nuri Farmer, persimmons are hung individually on strings, arranged at consistent intervals. Space is secured to allow airflow, and the persimmons are managed to slowly lose moisture in sync with natural temperature changes. During this process, sugars inside the persimmons migrate to the surface, forming a white powder. This is not sugar sprinkled on top, but naturally condensed sugar crystals.
This texture and flavor cannot be achieved through rapid drying methods. Only when time, air, and repeated monitoring of the state work together is a true dried persimmon perfected. This scene is therefore the core of Nurinongbu’s dried persimmons and also the process that receives the most questions.
